Back to Basics is a four night Course.
Time. 6.20pm for a 6.30pm start to finish before 9pm
You will be expertly guided by our Chef Maria Priante and your printed notes will ensure that you dont forget the experience. There will be some hands on, and some look and learn. You will enjoy fine food, and you will take away with you a wealth of knowledge each evening. This is such a worthwhile Course for all ages, and has been the one class we have repeated regularly over the past 8 years.
Night 1 .Knife Skills
· Tuesday 5th June Knife Skills
On Night 1, Students will learn methods, techniques and skills of using kitchen knives. Care of and sharpening of knifes is demonstrated with hands on experience. On the night there will be a demonstration for the correct way to cut & chop vegetables. The chef will also demonstrate the methods of boning out and cutting up a chicken. The process of making chicken stock for the following weeks class will be carried out on the night. A Stir-fry of Chicken and Vegetables will be served on the night.
Night 2. Stocks & Sauces
· Tuesday 12th June Stocks & Sauces
Night 2 is a great background to improve your skills in creating wonderful dishes. The class covers the history of sauce, it includes the making of Hollandaise, Veloute, Mayonnaise, Mornay, Caesar dressing and many others. Participants will get to taste the sauces with accompaniments throughout the evening.
Night 3. Meat
· Tuesday 19th June Meat
The meat class deals with all meats, Pork, Lamb & Beef. Techniques in how to cook the perfect Steak. B.B.Q-ing, Marinades. Explores the different cuts and uses for meat, and why certain cuts are necessary for our diet. Beef Bourguignon and Beef Wellington along with all the accompaniments is served on the evening.
Night 4 . Pastry
· Tuesday 26th June Pastry
All things pastry, how to use Filo and Puff Pastry, Short crust Pastry, Sweet and Savory Pastry Snacks and Profiteroles. On the night a variety of recipes will be produces such as Frangipanni, Creme Patisserie, Choux Paste and Spanakopita

A sensational class where we explore the basics of mastering Pasta from scratch.
You will experience the mixing and rolling of the dough, the shaping and filling of those delightful small pockets known as Tortellini and Ravioli.
